Alle Zutaten außer der Butter in einen Standmixer geben. Auf niedriger bis mittlerer Stufe mit dem Knethaken verrühren, bis sich der Teig zusammenfügt (ca. 8 Min.). Die Butter stückchenweise hinzufügen und weiterkneten, bis der Teig glatt ist.
Den Germteig in einer bemehlten Schüssel abgedeckt 1 Stunde lang gehen lassen, bis sich die Größe verdoppelt hat. Nun auf einem bemehlten Backpapierbogen rechteckig ausrollen.
Das Kokosöl schmelzen und den Zucker und Zimt einrühren. Diese Masse auf dem Teig verteilen und die Nüsse darauf streuen. Mit Hilfe des Backpapiers einrollen und die Teigrolle in eine passende Kastenform geben.
Nochmals rasten lassen bis sich der Teig vergrößert. Das Zimtbrot im Ofen bei 180 Ober-Unterhitze mindestens 25-30 Minuten golbraun backen. Vor dem Verzehr mit geschmolzenem Cashewmus begießen.
