Bunt und würzig – das ist unser veganes Ananas Curry definitiv. Einfach und schnell aber auch! Für unser Rezept braucht man zudem recht wenige Zutaten, um schlussendlich einen kulinarischen Gaumenschmaus zu zaubern.
Das Würzöl (oder alternativ Kokosfett/Kokosöl) in einer Pfanne erhitzen. Zwiebeln und Knoblauch glasig braten. Currypulver dazu geben und 2 min weiter braten.
Kichererbsen, Kokosmilch, Zucker und Salz dazu geben.
Ananas würfeln (Ananas aus der Dose gut abtropfen). Die Ananaswürfel und gehackte Jalapeño zum Curry geben und alles ca. 10 Minuten ohne Deckel köcheln lassen, bis das Curry etwas eingedickt ist. Erneut mit Salz, Curry und Zucker abschmecken.
Mit Koriander toppen und optional mit Reis servieren.
