Trockene Zutaten vermischen. Koksmilch und Apfelessig mit dem Schneebesen zügig unterrühren.
5 Minuten ziehen lassen. Kurz vor dem Ausbacken Sprudelwasser hinzugeben.
Kokosöl portionsweise in einer Antihaftpfanne erhitzen. Pro Pancake 1-2 EL Teig hineingeben, auf jeder Seite 3-4 Minuten mit Deckel backen. Eventuell auf einem Teller im Ofen (100 Grad; unten) warm halten.
Fertige Pancakes mit Kokos-Mandelmus bestreichen und mit saisonalem Obst genießen. Wer mag kann sich die Pancakes noch mit Kokosraspeln bestreuen.
