Eine Zwiebel fein würfeln und zusammen mit Spinat und 1 EL Kokosöl anbraten. Anschließend abtropfen lassen und die Flüssigkeit herausdrücken.
Couscous mit kochendem Wasser bedecken und 10 Minuten quellen lassen.
Die Karotten schälen und raspeln, die zweite Zwiebel würfeln und beide Knoblauchzehen pressen. Alles in 1 EL Kokosöl ca. 4 Minuten anbraten.
Die Karotten, den Couscous und die Gewürze (Salz, Pfeffer & Chili) zusammen mit dem veganen Hack zu einer homogenen Masse kneten. Den Blätterteig ausrollen. Den Spinat darauf verteilen und die Hackmischung darüber geben. An allen Seiten ca. 2 cm Platz lassen. Die kurzen Seiten einschlagen und eine Rolle rollen. Ca. 25 Minuten bei 190 °C Umluft backen.
Für den Minz-Joghurt die Blätter von der Minze fein hacken. Mit Joghurt und 1 TL Salz verrühren und zu der Hack-Rolle servieren.
